The wine
In France, Rosé Champagnes are considered to be the star product of many wineries, and this could be the case too at Can Ràfols dels Caus, if it weren’t for the unjustly deserved, bad reputation which Rosé Cava suffers from in Spain.
If we could stop prejudging it by the colour conferred on it by the fine black Pinot Noir grapes used to make it, this sparkling wine would give us a lot of bubbling pleasure, reminding us of the best of Champagne but with a touch of the Mediterranean.
