Codorníu recalls more than 450 years of tradition with this limited edition, bottle-numbered Cava, a blend of Pinot Noir (45%), Chardonnay (45%) and Xarel·lo (10%) originating from a rigorous selection of the winery's oldest and most exceptional vineyards. Jaume Codorníu is the authentic expression of a Gran Reserva Brut Cava, an elegant shade of gold and having pinkish flecks, with intense and complex aromas, revealing great harmony and persistence on the palate. A Cava to drink in a wine glass and enjoy for several years after its disgorgement.
The Chardonnay grapes come from the La Pleta vineyard, in the most continental area of the Cava DO, characterised by an extreme climate and soils lacking depth which result in a greater concentration of aromas and flavours; this variety also provides structure, persistence on the palate and density. The Pinot Noir originates from the El Coster vineyard, which is situated on the north-facing side of the Prades mountain, a cold orientation but alleviated by the sea breezes, lying on slate 'llicorella' soils which impart a distinctive mineral touch to the wine. Finally, the Xarel·lo is sourced from Nansa, a vineyard in the Alt Penedés, planted on gravelly limestone soils, which endow the grapes with good acidity for long ageing. Once the grapes have been harvested and then fermented, the coupage of the ensuing wines is carried out, followed by the usual second fermentation in bottle. The Cava then completes its ageing in the winery's silent underground cellars for more than 40 months; in some vintages, even over a period lasting longer than 50 months.
Jaume Codorníu is a Cava which is characterised by its aromas of peaches, redcurrants, melon, ripe fruits and other notes as a result of ageing which come over intensely (dried fruit and nuts, toasted bread, honey and yeast too). On the palate, its creaminess, elegance and persistence are highlights. A very special Cava, bone dry, perfect with food and very versatile, and for this reason, a firm favourite with some well-known restaurants for accompanying their tasting menus.
