The wine

L'Olivera Reserva Brut Nature is a sparkling wine produced by L'Olivera Cooperativa in the Costers del Segre designation of origin, Catalonia. This cava is made from 84% Macabeo and 16% Parellada grapes from organic vineyards located in the sub-area of the Corb River Valley. After a manual harvest and a first fermentation in stainless steel tanks, it undergoes a second fermentation in the bottle according to the traditional method, with a minimum ageing of 15 months. Disgorging is carried out manually and on demand, without adding sugar or expedition liqueur, resulting in an organic and vegan brut nature. In the glass, it has a golden yellow colour with bright reflections and fine bubbles. On the nose, it offers aromas of white fruits such as apple and pear, citrus notes and a background of brioche and toasted caramel. On the palate, it is fresh and flavoursome, with balanced acidity and a long, creamy finish. Ideal as an aperitif or to accompany seafood, grilled fish and light dishes. Best served between 6 and 8°C to fully enjoy its qualities.

To make their wines, this winery has at its disposal grapes from its own vineyards, some 20 hectares of vineyards scattered in small parcels in the sub-zone of Costers...
