The wine

Recaredo's Reserva Particular was created in 1962 by Josep Mata Capellades, who sought the expression of a well-aged Cava. All of the Recaredo Cavas are matured over a period of many months, but in the case of the Reserva Particular the maturation is exceptional, more than 100 months in the silence and darkness of its cellars until the most subtle of complexities are attained.

At Recaredo, not only are they sentinels of time, but also highly skilled workers of the land, vine growers with a true commitment to the countryside who produce genuine terroir wines, able to bring to light the Alt Penedès region, exhibit the rich nuances of grapes diligently nurtured and reveal the character of the vintage in the most honest and transparent way possible. With this in mind, all the Recaredo Cavas are Brut Nature and vintage Cavas, and their Reserva Particular is no exception: a tremendously complex and mineral Cava, which captures the limestone character of the soils of this easterly Penedès region and conveys a Mediterranean quality with its superb balance between warmth and freshness; with the ripeness of its fruit, from those Xarel·lo and Macabeo grapes, and its minerality; with its toasty notes, of biscuit, dried fruit and nuts, and its citrus, aniseed and fennel notes. In short, a Cava that is full of life, totally dry but having a delicious silkiness on the palate, a velvety texture and very fine mousse. An exhilarating and grandiose Cava.

I was really blown away by the 2008 Reserva Particular, without a doubt one of the finest vintages for this bottling. It combines incredible aromas (truffle, white flowers, bakery, flour, royal jelly, brioche) with great freshness and an explosive palate that has pungent flavors and intense minerality and is light but with great density and a super long finish. The wine matured for over ten years with the lees in the bottle yet is fresh and feels very young. Astonishingly good! The bottle I tasted was disgorged for me, as the wine is still aging and will come into the market at the end of 2019 or early 2020. There are some 5,000 bottles of this elixir.

Tasted blind. Am I tasting cacao? Earth. Maturity. Very tertiary. Bone dry and showing a gentle mousse. Really autolytic. Extremely refined, tight, concentrated. Really pushed towards the limits in terms of ageing. I love the truffle touch it has. Restrained, but extremely delicious.
