Minnella

After carricante, minnella is the most typical white grape of Etna. It owes its name to the fact that its berries look like an oblong-shaped breast, locally called "minna". It is mainly cultivated on the eastern side of the volcano and is almost always vinified in blends with carricante, to which it gives further acidity and a touch of softness. It can express its peculiarities even when vinified as a single variety, and some wine producers are experimenting to fully recover its cultivation.
