Pignoletto

Pliny the Elder tells in his Naturalis Historia that the fruits of that vine were so delicious that the pine tree around to which it grappled was glad to have it with it. "Pinus laetus": pignoletto. This is a typical grape of Emilia, certainly cultivated for over a century in the surroundings of Bologna, and has therefore become the most representative of the Bolognese hills. A typical homemade wine, in the territory it is traditional to make it sparkling, to optimise its freshness, its easy-to-drinkness and the characteristic almond return. And yet over the years pignoletto has been discovered to be a wine of a different calibre: vinified still, in fact, it expresses good structure, significant mineral notes, excellent sapidity and a certain vocation for ageing, thanks to a stay of a few months, or a year, in steel on the lees. It has therefore deserved protection in the Colli Bolognesi Classico Pignoletto DOCG. It also gives good results as a spumante, especially with the long Charmat method.
