The wine
It is a classy wine deriving from selected slightly dried Nebbiolo grapes harvested in November at an advanced stage of ripeness. It is a wine that is part of the local winemaking tradition when the winemakers, in the best years, reserved a small part of their grapes, the last ones, for a late and particular vinification. It is mainly produced from Nebbiolo grapes and is aged for at least 20 months in oak barrels. It is the perfect match for red meats, game, cheeses and cured meats.
