The wine
Corvina is the base of the great Valpolicella reds, and it is in purity that we can appreciate its different expressions in color, perfumes and body. The grapes were carefully harvested and placed in boxes for a 20-day drying period. The fermentation maceration lasted about 20 days. After racking, complete malolactic fermentation followed. The refinement in small capacity French woods lasted for 18 months followed by a barrel assembly and subsequent refinement for a further 6 months. A year in the bottle completes its organoleptic characteristics. It goes perfectly with game, grilled and stewed meat as well as very mature cheeses.

Serve between 16ºC and 18ºC
