Château Pique-Perlou La Sellerie

Natural concentration in the vine to promote the full maturity of the grape. Sellerie is a red wine made from a blend of Carignan and Syrah, manually picked, de-stemmed and placed in tanks. Fermentation is done with their own indigenous yeasts. The grape juice will transform into wine very slowly. Every day, the wine is subjected to very special care (pumping, entrapment, release of load) to allow it to ferment in good condition. After several months of maceration, the wine is placed in barrels where it will undergo malolactic fermentation in spring and where it will evolve for several months. Dark color, mature color, with aromas of truffle and truffle, velvety wine and very concentrated. Enjoy with a cassoulet, game, lamb, veal and cheeses.
