The wine
Its very stony vineyard, made up of clay, silt and limestone, stretches at the foot of the foothills of the Alpilles massif, from which we can see, to the south, the ruins of the castle. A suitable terroir for a Great Wine. The grape varieties for the Grand Vin Rosé - Syrah, Grenache, Mourvèdre, Cabernet Sauvignon and Cournoise -; for the Grand White Wine - Rolle, Roussanne, Grenache blanc and Clairette -, express concentration, complexity and finesse. Their wines grow in stainless steel vats in the heart of the underground cathedral, on fine lees (rosé) or on all the lees (white) for six months with a stirring operation.
