The wine
Gèss is obtained only from Gewürztraminer grapes. The name Gèss links the wine to the territory: Gèss is nothing but the dialect translation of the word chalk. The company develops almost entirely on a gypsum vein that was clearly visible at the time when the area was dedicated to the extraction of this material; of the quarry today there is no trace. The vineyard from which the Gess is obtained was planted in 1970. By limiting contact with oxygen as much as possible, after a week of maceration on the skins, the crushed grapes ferment in steel. It remains here until the following summer, passing both the winter and summer seasons, to mature and obtain the right stabilization.
