The wine

Romano Dal Forno is the champion of modern Valpolicella. Modern yes, but rooted in the tradition of the best grapes and vineyards of the classic area. Dal Forno's is the Amarone that makes new barrique (two years, to be precise): and, for lovers of the type, it is an amazingly successful marriage.

It has a beautiful intense ruby red color; as soon as it is brought to the nose, aromas as intense as they are complex strike: juicy ripe red and black berries, chocolate, licorice, cinnamon and then a journey through oriental spices. On the palate it is warm, fresh and with good tannins; the notes of chocolate and ripe fruit return and persist for a long time. Softness is guaranteed by a reduced sugar residue, a classic for an Amarone of this level.

It is recommended as a meditation wine, sipped gradually, or accompanied by flakes of Parmigiano Reggiano aged 24-30 months. Alternatively, it makes superb important dishes based on game, guinea fowl and pheasant, or a very tasty beef stew.
