The wine

Ancestral, non-interventionist production. Commitment to the ideas of purity, typicity and craftsmanship. Winemaking based on honesty, simplicity and classicism. Small, spontaneous fermentation processes using only wild yeasts, respecting the character, the caste and the uniqueness of each vintage.

Destemming, crushing, cold pre-fermentative maceration. Gentle pressing. Racking. Spontaneous fermentation with indigenous yeasts. Ageing on lees, maturation in the cellar for 9 months in stainless steel tanks with frequent battonnage of fine lees. Subsequent resting for a further 2 months in the bottle.

An emotional Albariño, which harmoniously combines intensity, freshness and elegance. A complex, sophisticated wine, with marine notes, which stands out for its variety of aromas of white flowers, honeysuckle, aromatic herbs, light balsamic, mint, intense citrus (grapefruit, lemon), tropical (lychee) and stone fruit. In the mouth it is markedly fruity, fresh, structured, ample and silky. Flavoursome in its long length and powerful finish.

Great capacity for evolution in the bottle. It is in maturity that Davide reaches its maximum splendour and elegance.
