Winemaking
The grapes are kept at a low temperature once they reach the winery, and this continues right the way through the production process, in order to ensure the highest quality of must and that the aromas obtained are the finest possible. The grapes are cold when they arrive for pressing and subsequently settling also occurs at a low temperature, as well as fermentation.
