The wine
The regional appellation of Burgundy is surely the best and one of the most economic ways to get to know the expressiveness of Pinot Noir, a delicate grape whose preferences for cool temperatures and por soils makes it challenging to grow. Grapes produced with this variety, like this one from Henri Pion, do not generally have a strong colour in the glass but they are especially rich in aromas of red fruits, wild strawberries and cherries. Crispy and silky wines, they are both lively and easy to drink.
What does this wine taste like?
With its floral and pleasant fragrance, a silky and discrete mouthfeel, and reserved acidity and splendidly rounded tannins, Henri Pion Bourgogne Pinot Noir floats over the tongue creating an almost ethereal sensation. A delicately spicey wine, it represents an accessible Burgundy but displays its own character. Lively but not excessive, it seduces without making a noise. A spongy, almost lactic, feeling coats the inside of your cheeks leaving a fine trace of tannins, reminiscent of the bread crumbs Hansel and Gretel used to mark their way home. An intense ruby-red colour shows that the ageing process respected the fruit and ensured the wine lost none of its freshness. It displays discrete toasted notes and its structure fits in perfectly with its woodland profile, creating a balance rarely seen in Burgundy wines.

A wine which can be enjoyed young or kept for a couple of years.
Food pairing
No special occasion is needed to enjoy Henri Pion's Pinot Noir but it does work wonderfully with dishes of game or duck accompanied with red fruits.

Winemaking
The fruit is collected by hand and destemmed. The must is fermented and the wine aged in French oak barrels for eleven months. It's barely filtered before being bottled with a very small quantity of sulphites.
