Winemaking
The Brunello is the ace of the Montalcino wines, produced exclusively from grapes of the Sangiovese variety; in this case, picked by hand from the estate’s oldest vines.
Fermentation occurs at a controlled temperature (25-28 °C) in stainless steel tanks and by the action of yeasts from the actual vineyard. The cap remains submerged and malolactic fermentation is also allowed to take place in the same container. Afterwards, the Tenuta Il Poggione Brunello di Montalcino is aged in French oak barrels.
After its oak-ageing, the wine is matured in bottle: this is an essential process for guaranteeing the pleasantness and complexity which have made the Brunello di Montalcino become world famous.
