The wine

Made using 100% Palomino grapes, Lustau Manzanilla Papirusa ages under a veil of yeast, known as the ‘yeast flower’, in Sanlúcar de Barrameda, with a damp micro-climate and the sea breeze around the mouth of the River Guadalquivir. The word Papirusa means beautiful and elegant, and it was the name of the doll Emilio Lustau gave to the daughter of Joaquín Burgos, the first manager of the Bodegas Lustau winery, back in the 1940s.

What does this wine taste like?

It displays a bright yellow colour with golden glints. Aromas of chamomile, sea breeze and green apples delight the nose, with notes of hay and fennel in the background. After a few minutes, smoky tones appear, reminiscent of roasted nuts and the gentle notes of yeast flower.

An extremely dry wine with a light-medium body, fresh and crisp on the palate, and expressing a fine bitterness and good length. A splendid blend of saltiness and rich flavours makes it an irresistible and mouth-watering Sherry wine.

Wine critics reviewsReviews by Parker and Jancis Robinson

The NV Manzanilla Papirusa from Sanlucar de Barrameda has an intense straw color with a smoky nose of roasted nuts. The palate is dry and light, with clean, pungent flavors, showing finesse and good length. Lustau is doing a good job to improve their Manzanillas, working with a good almacenista in Sanlucar.

Delicate and salty. So salty and so fresh. Tangy, achingly dry and mouth-watering.

The original company was founded in 1896 by Don José Ruiz-Berdejo, a wholesaler who grew vines on an estate that is still in the family, and sold his wines to the large exporting bodegas. Don Emilio Lustau Ortega, his son-in-law, established the bodega in 1940 in the old quarter of Jerez de la Frontera, from where the company has been exporting its wines since 1950. Over the next 40 years, there was considerable development, including new bodega facilities, until in 1990 the...
