The wine
Valpolicella Classico, defined by Hemingway as "cordial as the home of a brother with whom you get along", is proposed here as an example of elegance made of simplicity and freshness. It is produced in Valpolicella Classica from the traditional Veronese Corvina, Rondinella and Molinara grapes.
At sight it has a cherry red color of medium intensity. The nose is intense with hints of ripe cherry. The sip is fresh and acidic, with soft and silky tannins. Dominant cherry, vanilla notes. Typical wine throughout the meal: excellent with soups, pastas and risottos. It enhances both simple and important dishes based on red meat and medium-aged cheeses.
