The wine
At sight it is a straw yellow color. Very fine and persistent perlage. It is a sparkling wine of rare structure and elegance (90% pinot nero). The nose is highly evolved, the typical hint of cassis leaves room for an aristocratic hint of vanilla. Dry flavor with the right aromatic persistence and good softness, it is a sparkling wine dedicated to connoisseurs; it also has a very dense and fine foam. Excellent as an aperitif and throughout the meal, especially paired with smoked salmon, oysters, seafood, snails, sea urchins, prawns, mussels, scallops, risotto with seafood, tagliolini with shellfish, Ligurian sea bass, red snapper, sea bream, turbot, ideal with mixed fried.
