The wine
Otazu Chardonnay shows a side to this famous Burgundy variety widely different from the typical buttery-tasting white wines with toasted notes gained from long spells ageing in wood. Otazu Chardonnay is simply fruit, embodying the purest expression of the grape.
What does this wine taste like?
Notes of bitter apple skins stand out over a background of aromas of peach, pineapple, and citrus zest in an intense and fruity nose. A subtle herbal hint (grass and aniseed) adds freshness and fragrance. It has a pleasant feel in the mouth, displaying both volume and agility. A varietal character first noticed in the nose is confirmed upon a first sip. Its good level of acidity balances a considerable unctuosity thanks to its time spent on lees. Flavoursome and rounded, it is a fresh and somewhat saline wine with an enveloping texture and seductive bitter tones stretching out to a lovely aftertaste.

Drinking and storing
Best served in a white wine glass at a temperature between 8 and 10ºC.

Food pairing
Pairs wonderfully with white meats (chicken, turkey) in creamy sauces, white fish a la meunière, battered vegetables or pasta salads.

Winemaking
Harvested in September. The must is left to clarify before fermenting at controlled temperatures in stainless steel tanks to retain its personality and varietal characteristics. The wine is then left to stand on its lees in tanks for three months.

Vineyards are planted north-south in the Cuenca de Pamplona region with a total surface area of 110 hectares spread among 30 different plots covering from one to five hectares each. Gravel soils with different amounts of clay. Continental climate with Atlantic influences.
