The wine
Pardelasses is a pure, honest to goodness wine resulting from Garnacha and Cariñena grapes in equal quantities that undergo an excellent vinification process. Juicy, mineral and fresh, and one which will fool many on price, as it shines out amongst wines with much greater renown.
NOTE: It is advisable to let the wine round off for a time in bottle, and it should always be decanted at least an hour before serving.
Ideal as an accompaniment to duck confit with red berry fruits or a confit of ribs served with plums.
Aged for 12 months in French and American oak barrels. Afterwards, spending 6 months in bottle.

Jordi Aixalà is a small wine producer in Torroja del Priorat who, after experiencing employment in other wineries, decided to embark enthusiastically on a new project of his own.
