The wine

100% Saperavi from vineyards lying at an altitude of 480 metres, 50% destemmed and macerated with skins for a month. Fermented in qvevri (amphorae sunk into the ground) with native yeasts and aged in the same containers for nine months.

Thus, the Pheasant's Tears Saperavi is an intense and earthy wine, with aromas of blackberries, ripe blackcurrants and toasted almonds, with an elegant tannic structure and very good acidity. Having a spicy and slightly dry finish.

NOTE: The Saperavi, the most popular red grape in Georgia, has such an impenetrable colour that it's called black in Georgian. Even the pulp of the berries is coloured and all that pigment is conveyed to the wines.

Serve between 14ºC and 16ºC
