The wine

Sardón is produced from a selection of grapes growing on goblet-trained vines in several carefully-chosen plots along the Duero valley, in both Burgos and Valladolid, with the aim of creating a more aromatic and fresher wine than those usually found in the region. Vines are hand-harvested individually to ensure perfectly ripe fruit and an acidity which brings energy to the finished product.

The maceration and fermentation processes are kept short and at controlled temperatures to ensure the fruit loses none of its natural freshness. Sardón is then aged for 6 months in used French oak barrels, 1200 litre foudres, and concrete eggs; different storage options which do not affect the primary aromas of the grape and produce a wine ready to drink from a young age.

Sardón expresses sobriety and elegance, freshness and strength. A Ribera del Duero wine which, though it does not come under the DO appellation label, shares the essence of the region with its neighbouring wines. Its dark Picota cherry colour gives a clue as to where the wine will take us. Elegant and noble with no rough edges, it is a wine showing an enviable balance between strength and equilibrium. Wood accompanies the fruit, embellishing it with spices and subtly bitter tones from the toasted barrel staves. Aromas of tobacco leaves mix with mint, ripe blackcurrants and cherries. Smokey hints then appear among perfectly ripe wild fruit. Sardón improves and opens up splendidly after decanting and waiting a short while, filling the mouth with polished tannins and tense acidity. Typicity in a bottle, it is a wine easily worthy of its place among the other great members of the Quinta Sardonia family.

We suggest serving this wine at 15ºC and allowing it to open up in the glass for full enjoyment of all its nuances.
