The wine
The name Pajè derives from the Piedmontese dialect, with which the vineyards were historically named. It is one of the historic vineyards of Barbaresco. It is located in the center of the town's vineyard area.
Pajè is particularly rich in calcareous marl, with a high content of active limestone. Extending over an area of 1.83 ha, it has a unique soil and microclimate. The Pajè amphitheater opens onto the valley of the Tanaro river, which mitigates cold winters and hot summers. It is a small strip of land facing South West.
The plants of this vineyard have a minimum age of over 50 years, while today the average age is over 60. The vineyard is harvested in October, at perfect physiological ripeness, through manual harvesting, in small boxes. Before being vinified, the grapes follow 2 manual selections aimed at determining the perfect integrity of the fruits.
Fermentation takes place exclusively in wooden vats, thanks to a pied de cuve of indigenous yeasts. The wine ages in a neutral oak barrel for about 5 years. The production of bottles is very limited, with a couple of thousand per thousandth. On the label you can find the total number of bottles produced.
