The wine

San Cobate is made with a careful selection in the vineyard of grapes from four different areas of the estate, which are very interesting due to their differences in altitude, orientation and soil. It begins its ageing in Burgundian barrels and finishes in French and Austrian oak vats of more than 15 years old.

Bigarreau cherry red colour with garnet reflections. Fruity aromas of ripe fruit on the nose. Notes of ageing with oak wood in the background and balsamic and spicy hints. In the mouth it is powerful but with a good balance between maturity and freshness. Sweet tannins, structured. Elegant and enveloping finish.

The Tinto Fino 2019 La Finca is the red blend from different plots in the property, selected from 36 hectares planted between 1986 and 2010, when they planted the terraces on sand, clay and limestone soils between 830 and 910 meters in altitude. They used grapes from four parts of the property with different exposures, soils and expositions, and the wine had a long élevage. The destemmed and crushed grapes fermented in concrete with indigenous yeasts, and the wine matured in used barriques for eight to 10 months and in 6,000- to 24,000-liter oak vats for a further six to eight months. It has 14.5% alcohol and a pH of 3.53, with notes of ripe berries and some herbs and spices, quite austere in the palate with abundant, slightly dusty tannins. It's medium to full-bodied and with a long, dry finish. It's ready now. 38,069 bottles, 1,790 magnums and 210 double magnums produced. It was bottled in February 2022. San Cobate is a young winery created in 2016 by Antonio Vázquez Muñoz-Calero, although the Benedictine monks built the monastery of San Cucufate near the estate in the mid-11th century, where they planted the first grapevines on this privileged land.
