The wine
After maceration lasting 30 days, with daily stirring by hand, the wine is drawn off into new French oak barrels (60% Allier 40% Vosges) for undergoing malolactic fermentation. The wine is aged for 16 months and finally bottled without filtration, remaining for at least 6 months in bottle before being released.
A dark cherry-red colour, there is complexity on the nose, revealing aromas of black fruits (blueberries), with spicy and mineral hints. On the palate, this wine is flavoursome, meaty, and dense, with ripe tannins and a fruit-filled, lengthy finish.
