The wine

Torre Testa is an intense, classy and elegant wine, the fruit of partially dried grapes. Leader of the Susumaniello project and symbol of the renewed Salento winemaking verve, with a powerful acid boost and tannins of unparalleled finesse.

Very intense dark red with purple flashes. There are elegant, ethereal and complex notes of black cherry and plum in alcohol, black currant and blackberry jam, which alternate with delicious hints of chocolate, juniper, nutmeg, licorice, cinnamon and ink.

Of great class and harmony, the sip is intense, of endless persistence, the extraordinary result of a powerful and fragrant fruit, powerful acid boost and tannins of an unequaled finesse, already very noble and well defined.

It goes well with first and second courses of great structure, such as pappardelle with meat sauce, grilled and baked meat, stewed game. The encounter with the well seasoned Canestrato Pugliese DOP is intriguing.

It was Luigi Rubino, in the nineties, who completely rediscovered Susumaniello, placed at the centre of a dual project: to enhance it in its best habitats, identifying crus in which to grow it as a single vineyard, and let it express itself over time. Oltremé, the simplest, stays 10 months in steel, while Torre Testa, the great selection, rests 6 months in steel, one year in barrique and another year in bottle.
