The wine

The Tokaji-Aszú wines are made according to an ancestral method, collecting the grapes in small baskets, the famous 'puttonyos', corresponding to 20 kilos of botrytised grapes added to 100 litres of white wine. This means that for a 5 Puttonyos like this one, there are 100 kilos of botrytised grapes in 100 litres of white wine.

The Aszú wines are matured for two years in barrel and for at least one year in bottle before being released, a process which allows the wines to develop their delightful aroma and ageing potential, as you will be able to confirm with this exceptional Pajzos, a Tokaji boasting an attractive golden colour and a refined nose of candied citrus fruits and white flowers that captivates right from the start. The interplay of aromas with caramel, honey and dried apricots on the one hand, and the buttery hints and touches of dried fruits and nuts on the other, makes it extremely complex. The Tokaj terrain's classic minerality adds an extra touch of salinity overall to a wine that promises to age wonderfully.

Pajzos was established in 1991 by 12 investors, including Jean-Michel Arcaute (1947 - 2001), director of Château Clinet (Pomerol), La Croix du Casse (Pomerol), Beau Soleil (Pomerol) and Jonqueyres (Bordeaux).
