The wine
A nose of black fruits (blueberry and blackberry) with a touch of toast. The palate is very fresh and aromatic.
"Thermomix" vinification to obtain maximum fruit while retaining silky tannins. A third of the harvest is heated to 70 ° C, instantly cooled to 15 ° C then integrated into a carefully selected harvest before starting the fermentation. After 15 additional days of vatting, the juice is drained and micro-oxygenated to sublimate the fruit followed by natural malolactic fermentation.
