The wine
Destemming, spontaneous fermentation and maceration on the skins for 2 weeks in underground terracotta amphorae. Aging on the fine lees for 7 months in the same containers. Saperavi by Zurab Topuridze is an intense and authentic red wine. Inked and rustic, after an austere entrance, it takes shape and lines over time, revealing small and fragrant black fruits. Agile and lively, thanks to a nice acidic shoulder and a slightly wild tannin.
