Some years ago, he started a series of investigations and experiments in the vineyard with the purpose of recapturing the aromas and flavours that he felt were quintessential to the Ribera del Duero but had recently been lacking, either hidden, overlooked or simply not apparent, due to style factors such as oak-ageing, in particular, but also due to enzymes, yeasts and preservatives (sulphur, ascorbic acid etc.)
Goyo is a vine grower with a passionate interest in reclaiming old vineyards and using traditional methods, long-forgotten in this modern era of grape-growing, where there is such an emphasis on the application of herbicides, pesticides and fertilizers. Goyo claims that he is constantly learning from those who for years have been practicing the very same ideas and are convinced, just as he is, that wine is made in the vineyard and not in the winery.
