The Auslese ('selected harvest' in German) category ranges between semi-sweet and sweet wines, produced using bunches which have been carefully chosen due to their advanced state of ripeness, some of which have been affected by noble rot, but not all. Without reaching the over-ripeness and superior quality of the Beerenauslese and Trockenbeerenauslese, with these having been totally affected by the fungal disease noble rot or Botrytis cinerea, Auslese is considered to be the first level of dessert wine on the German sweet spectrum.
