Ice wines are sweet wines made with frozen grapes and are typical of cold climate regions like Canada, Germany and Austria. The grapes are picked when very ripe and without being affected by noble rot and the cooler the climate, the greater the concentration of sugars. In some countries where the regions are warmer the production process is simulated by freezing the grapes artificially, but they can’t rightly be considered Ice wines, due to the precise regulation applied to this type of wine, known as Eiswein in German.
