Mistela

Mistela is considered to be a sweet fortified wine and enjoys a great tradition in the warmer regions of the Mediterranean; although it’s not strictly speaking a wine because it’s made with must which hasn’t really fermented. Its name derives from the mixtella (mixture) and in its production the must has to macerate with wine alcohol. Precisely because the alcohol is added just at the start of the wine-making process, this actually prevents fermentation and enables the retention of almost all the sugar in the fruit. It’s ideal both as an aperitif and to accompany dried fruits and nuts as well as a variety of desserts.
